The Role
We are looking for a Corporate Chef to work out of our Kelowna office to develop our Fresh Food Program. The successful candidate will be directly responsible for implementing the culinary standards and overseeing the culinary operations of Canco store nationally. They will be responsible for supervising all kitchen functions, including food purchasing, preparation and maintenance of quality standards, sanitation and cleanliness. Most of their time will be spent outside of the kitchen researching and responding to trends in the food industry, planning and writing menus, budgeting and financial planning, and participating in business development. The corporate chef will also recruit and hire staff, supervise their activities and instruct cooks in the preparation, cooking, garnishing and presentation of food.


Core Responsibilities


  • Develop day-to-day Kitchen operations and Culinary team
  • Execution of Daily Food Service, Quality, Technique, Portion, Presentation, and Food Cost Control
  • Drive Category with Menu Pricing and Menu Innovation
  • Track food costs while Managing Vendors to provide Standard, Cost-efficient Products
  • Estimate Food Consumption and Requisition of Food Purchase – create site level best practises
  • Standardize Production Recipes to ensure consistent quality
  • Responsible for the continued growth of overall catering: Cost, Quality, Presentation and Innovation
  • Collaborate with General Managers on expense tracking for accurate financial projections
  • Responsible for leading category through kitchen purchasing
  • Ensure that appropriate Sanitation, Maintenance, and Safety Standards are followed
  • Implement and maintain Culinary Excellence Standards
  • Train and manage kitchen personnel and supervise all culinary activities


Qualifications

5+ years experience in Head Chef, Corporate Chef, Recipe Development or similar role

The ability to manage in a diverse environment with a focus on client and customer services

Must be able to communicate clearly with site managers, kitchen personnel and vendors

Strong organizational and time management skills

Food Safety Knowledge is required

Computer skills are considered an asset

This is a fill-time position that will work primarily from our Head Office in Kelowna.
